BBQ Pulled Wild Boar Buns Recipe

Ingredients

1 pack of 2 Ben Rigby wild boar loin steaks, available from Wild and Game

For the spice rub

2 tsp brown sugar
1 tsp salt
2 tsp paprika
Half a tsp garlic powder
Half a tsp onion salt
Half a tsp cumin
A few grinds of black pepper

For baking the boar

Half a bottle of beer
1 tsp liquid smoke (optional)
A couple of glugs of vegetable oil

For the BBQ sauce

150g tomato ketchup
1.5tsp Dijon mustard
1 tbsp cider vinegar or white wine vinegar
3 tsp honey
1 tsp liquid smoke (optional)
2 tsp Worcestershire sauce
Half a tsp smoked paprika
25g brown sugar

To serve

2-3 burger buns

Method

1. Pre-heat the oven to Gas mark 2, 150 degrees Celsius.
2. Make the rub and rub it all over the meat.
3. On the hob, heat the oil in a Dutch oven or similar ovenproof pot.
4. Sear the boar then pour in the beer and liquid smoke, if using.
5. Put the lid on and place in the oven for 3 hours. Check occasionally and add a bit more beer if it looks dry.
6. Meanwhile, make the sauce by heating all the ingredients in a pan until you have a bubbling, glossy sauce.
7. When the boar is soft enough to pull apart, take it out of the oven and shred it using two forks. Add it to the sauce and stir until coated.
8. Serve in burger buns.
